Egg fried rice - family favourite

This is a perfect family dish that you can combine anyway you like it. We like it with grilled chicken & fried onions, but options are limitless. Also perfect platter for group dinners or BBQ's. And with some little secrets, surprisingly tasty & sweet!

Preparation time: +/- 30 minutes

Serves 6-8 people


Ingredients

500g Basmati rice

10 slices bacon

4 spring onions

4 eggs

200g frozen peas

2 tblsp Hoi Sin sauce

3 tblsp sesame oil

soy sauce

1 garlic clove

500g chicken

Fried onions

(Chili Bean paste)


Cut your chicken in small pieces and marinate in Hoi Sin Sauce, soy sauce, sesame oil (not too much), crushed garlic and if you like spicy add 1 tablespoon Chilli Bean paste. Stir well and put it in the fridge with plastic foil as long as you have. If you have time, we advice to do this in the morning, but even if you only start 30 min before cooking, marinating your chicken is worth it!


Using Basmati rice is important, because we need dry and not sticky rice for this dish. Prepare the rice according to instructions on the package. When cooked, rinse with cold water and let the rice cool for 30 min.


When rice cooled down, heat a large wok on high heat and add the sesame oil and bacon cut in small pieces. If you don't have a large wok, you can also use 2 frying pans and prepare at the same time and just divide the ingredients over the 2 pans. Defrost your frozen peas in hot water and put it in bowl with cooked water for +/- 10 min. Beat the eggs in a bowl and add to the pan once the bacon is crispy. Don't stir, just leave the egg untill almost cooked and only a little liquid top layer left. Then add your rice and peas and mix everything very well. Mix 2 tablespoons of Hoi sin sauce with 2 tablespoons of water and add the sauce gradually to the rice and keep stirring. If you like it sweet, add a little more Hoi Sin. Add salt&pepper to your taste.


Fry your marinated chicken in a separate pan or use a grill pan if you have. Don't fry it too long to keep the tenderness. Cut the spring onions in small rings.


Add the fried rice to a nice plate, add the fried chicken on top. Finish off with the spring onions and fried onions. Your dish is ready to serve!


We like to prepare a lot from this dish, because it's perfect to put leftovers in your freezer.
