Tortilla salsa - mango & coriander
Finely cut Uzbeki tomatoes, red onion (flat salad onions), mango and coriander and mix with salt&pepper. You can vary the amounts the way you like it, but if your tomatoes are nice&tasty we recommend 2/4th tomatoes, 1/4th mango, and 1/4th onion. You can also spice it up with some finely cut red pepper. Perfect salsa to serve with Mexican corn tortilla chips.
Tuna-olive spread - fresh
125 grams of green olives, de-pit
2 tbsp small green capers, rinsed&dried
1 clove of garlic, finely chopped
1 tsp of lemon zest
1 tin of tuna in oil (keep the oil!)
2 tbsp of chopped parsley
extra virgin olive oil
Blender the olives, anchovies, capers, garlic, lemon zest, tuna with oil and parsley until just mixed. Add some olive oil if the mixture is too dry. Serve with some fresh crispy bread!
