Our kids could eat pancakes every day! With an easy trick you can make healthy pancakes that you can call "princess"or "dinosaur" pancakes.

Preparation time 30 minutes
Serves 2-3 people
Pancake mix
250 gr flower (Nordic)
500 ml milk
2 large eggs
1/2 teaspoon salt
1/2 teapsoon cinnamon
1 teaspoon olive oil
2 boiled beetroots
handfull baby spinach
butter to bake
Tip!
Use a special pancake/blini pan.
Put the flour in a colander above a large bowl and shake until all flower is very fine. Mix the flour with the salt, cinnamon and half of the milk and stir untill smooth. Add one of the eggs and keep on mixing. Then add slowly the remaining milk while you continue to mix. Add the oliveoil when your mix is smooth and stir in.
Put half of your pancake mix in a tall cup for a blender and add 2 beetroots. Blend until the mix is nicely purple and smooth.
Do the same for the other half of your mix and add baby spinach leaves and blend until smooth and nicely green.
You can variate with regular mix, beetroot, spinach or even arugula and let your kids choose. Our kids love it and secretly eat healthy veggies in this treat!
