This fresh pasta tastes like spring with its sour lemon taste and crispy prosciutto bite combined with sage & olives. Best of all, it's done in 20 minutes!

Preparation time 20 minutes

Ingredients
400 gr pasta
12 slices prosuitto
15 green olives
10 sage leaves
ricotta
1 lemon
dried chili flakes
grated parmesan cheese
4 table spoons extra vergine olive oil
large knob of butter
Fill a large pan with water and bring to a boil. Add the pasta and boil until al dente (+/- 8-10 minutes). When ready rinse with cold water and put aside. Cut the proscuitto in pieces and put it in the empty pasta pan with the butter, olive oil and whole sage leaves. Cook on medium high heat and stir until crispy. In the meantime you can grate your lemon zest. Add the pasta, lemon zest, quartered olives and juice from the lemon to the pan. Stir well and add some salt&pepper to your taste.
Before serving add ricotta, chili flakes and grated parmesan to your taste and top off with a little of your most tasty olive oil. Even kids will love this this fresh and healthy pasta!
